Valerio Pescetelli was born in Rome, Italy. His father was a prominent chef, who loved his work and passed the same passion on to his son. As a young boy, Valerio started by helping his grandmother prepare handmade pasta and by age 13, he attended the Academy of Culinary Arts in Rome.
In 2004, Valerio left Rome and moved to London, England where he worked at Orso Ltd., one of the most popular traditional Italian restaurants in Covent Garden, London. He prepared foods for many prominent guests, including Her Majesty Queen Elizabeth II and the Royal family. Valerio spent an intense year with Gordon Ramsey (chef, TV personality and restauranteur), learning to make the stunning fine dining presentations which are now standard in each of his dishes.
In 2009, Valerio moved to Sarasota, Florida to manage the kitchen at Cantina Toscana. Valerio's primary goal is for each customer to enjoy the quality of authentic Italian recipes, and for the service and ambiance at Cantina Toscana to far exceed their expections.
